Coffee is gluten free. Coffee with a bit of soy milk is really all one needs for breakfast, right?
Ok, really, breakfast has been hard for me. A year ago, for my birthday, I asked for popovers in bed from my beloved. As he said when I asked him if there was any way we could do them gf, there is not a snowball's chance in hell. Popovers depend on the gluten molecules to do their thing.
Other favorite breakfast meals include biscuits in gravy, pancakes, and latkes. Those can all be altered, but I have been less than pleased with the texture of gf bread products recently.
I have switched out polenta for hard to find gf oatmeal, and that works pretty well when I can get away without protein.
My fallback breakfast these days is an egg, sausage, pepper, and cheese scramble inside a corn tortilla or three.
As unhealthy as it is, on weekdays, I often just don't get a chance to eat breakfast.
